Pizza Cookie

Recipe from Happy Cookie Lady.

Ingredients:

1 tube refrigerated sugar cookie dough
3/4 cup strawberry preserves, or if you prefer, seedless raspberry preserves
Strawberry fruit rolls - look for the kind without printing in them
1/2 cup shredded white chocolate

Directions:

Preheat oven to 375. Spread cookie dough onto 12-14 inch pizza pan ( I used a 12 inch disposable one ). No greasing of pan is necessary. Bake until golden brown. Let cool completely.

Cut fruit rolls into round pieces to represent pepperoni using either a kitchen scissors or small round cookie cutter. Spread Strawberry preserves on baked cookie like pizza sauce, top with strawberry "pepperoni " slices and sprinkle with shredded white chocolate. Slice in wedges as you would a pizza.

You could also add chopped green and white gumdrops to represent green pepper and onions if you like.
