Potato Cakes

Recipe from Mission Grille.

Ingredients:

5 lbs mashed potatoes
10 oz  blue cheese crumbles
4 oz   scallions, sliced
2  eggs
15 oz  flour

10 eggs
1/4 cup water  
4 cups flour
1 tsp  kosher salt
1/4 tsp ground black pepper
9 cups Panko bread crumbs
1/4 cup parsley

Directions:

Combine mashed potatoes, blue cheese, scallions, 2 eggs, and 15 oz flour together. Portion out with a 4 oz portion scoop on lined sheet tray, and form into cakes. Place in freezer for ten minutes.

While cakes are in freezer mix together 10 eggs and 1/4 cup of water to make egg wash. In separate bowl make seasoned flour by mixing together 4 cups flour, 1 tsp salt, and 1/4 tsp black pepper. In a third bowl mix together 9 cups panko bread crumbs and parsley  ­---Remove cakes from freezer and dredge in seasoned flour, egg wash, and panko. Fry in pan with olive oil until golden brown and finish in oven until heated through.
