Potato Leek and Bacon Soup

Ingredients:

1 cup flour

1 cup butter

8 red potatoes with skin, diced in ½ inch cubes

1 cup chicken broth

1 cup vegetable broth

2 cup milk

1 lb bacon, cut into 1 inch pieces

3 leeks, washed and sliced

1 Tbsp Salt

1 Tbsp pepper

2 tsp dry thyme

2 cloves garlic, finely diced

1 Tbsp hot sauce

1 Tbsp  Worcester sauce

2 tsp dry mustard

1 cup heavy cream

Directions:

In sauce pan melt better and slowly add flour to make roux.  Add leeks, salt, pepper, dry thyme, garlic and sauté 2 minutes, and then add bacon.  Slowly add stocks and milk.  Then add potatoes, hot sauce, worcester sauce, dry mustard.  Once potatoes are soft add heavy cream.  Ready to serve.
