1 bunch fresh asparagus
2 packages thinly sliced prosciutto
1 small pkg creamy goat cheese, room temperature
1 Tbsp extra virgin olive oil
Juice from half a lemon
2 tsp minced garlic
salt & pepper to taste
Preheat oven to 400 degrees
Wash asparagus thoroughly, pat dry and remove ends
In a large bowl, coat asparagus with olive oil. Add minced garlic, lemon juice, kosher salt and pepper. Mix until asparagus are evenly coated.
Spread a sheet of prosciutto with 1 tsp of goat cheese and wrap around 1 asparagus spear, starting at the spear. Repeat until all asparagus spears are wrapped.
Put wrapped asparagus on a cookie sheet sprayed with cooking spray. Make sure asparagus are in a single layer and not toughing.
Bake for 8-10 minutes until asparagus are just tender. If you prefer your prosciutto to be crispy, you can turn the broiler on high for a minute or two. Serve immediately and enjoy!
