Bailey's Irish Cream Cheesecake

Ingredients:

Crust:

2 cups graham crackers crumbs

1/4 cup sugar

6 tablespoons butter

Filling:

4 1/2 packages (8 ounces each) cream cheese, softened

1 2/3 cups sugar

5 eggs

1 cup bailey's irish cream

1 tablespoon vanilla

Garnish:

1 cup whipping cream

1/4 confectioners sugar

2 tablespoons kaluha

Directions:

Combine all the crust ingredients, mix well.  Press into and 1 inch up the sides of a greased 10 inch springform pan.  Bake at 325 degrees for 10 minutes, cool.  In a mixing bowl, beat the cream cheese until smooth.  Add the sugar, mix well.  Add the eggs, irish cream and vanilla, just until combined.  Pour into cooled crust.  Bake at 325 for 55 to 65 minutes or until center is almost set.  Let cool at room temperature for 1 hour, refrigerate overnight.  In a mixing bowl, beat the whipping cream, confectioners sugar and kaluha until stiff peaks form.  Pipe around edges of cheesecake.

Note: To make it extra irish, pipe on waxed paper and fill in with chocolate 4 leaf clover shapes.  Let these set.  Carefully peel off waxed paper and decorate around the edges with the clovers.
