Baked Fish in Foil

Ingredients:
2 fish fillets (red snapper, haddock, halibut, orange roughy, tilapia, or another white fish)
1 fresh lemon
4 tablespoons cold butter, cut in pieces
2 tablespoons of fresh chopped herbs (dill, parsley, thyme or a combination)
1/2 teaspoon garlic salt
Black pepper
2 large pieces of foil
Directions:
Spray each piece of foil with cooking spray. Place 2 slices of lemon on each piece of foil. Place 1 piece of fish on top of lemon slices. Places pieces of butter on top. Season fish with garlic salt and a little black pepper. Squeeze some fresh lemon juice on top of fish. Sprinkle with herbs. Close up foil to form packet. Bake on a cookie sheet at 400 for 12 to 15 minutes or until fish flakes easily. Carefully open hot foil packet. Serve with extra lemon slices. Great with rice and fresh steamed vegetables.
