French Apple Frangipane Tarts

Ingredients:
1 sheet puff pastry
1/4 cup frangipane (recipe below)
2 apples, any kind
2 tablespoons butter, melted
1/2 cup sugar
Directions:
Unfold puff pastry and 4- 4" circles. Place circles on parchment lined cookie sheet. Put 1 tablespoon of frangipane in center of each pastry. Peel and core apples. Cut in half and thinly slice. Fan 1/2 of each apple over frangipane and pastry. Brush tops with melted butter and sprinkle with sugar. Bake at 400 for 15 minutes or until brown.
Frangipane:
6 ounces almond paste
2 tablespoons sugar
3 ounces unsalted butter, softened
2 eggs
2 tablespoons flour
Directions:
Beat together almond paste with sugar. Add butter and beat until light and fluffy. Add eggs, one at a time. Fold in flour. Refrigerate until needed.
