Southwest Breakfast Wraps

Ingredients:

3 pieces of bacon, diced

1/4 cup roasted red pepper, diced

1/4 cup red onion, diced

1 1/2 cups scrambled eggs

1 tortilla (flavored or unflavored)

2 tablespoons cream cheese

Pinch of cumin and coriander

Salt and pepper

Sriacha or salsa to garnish

Directions:

Heat pan with splash of oil.  Add bacon and saute briefly.  Add red pepper and onion and continue to saute.  Add cumin, salt and pepper and then add eggs.  Scramble eggs to soft scramble and set aside.  Spread cream cheese on tortilla and top with scrambled eggs.  Roll tortilla tightly and place in preheated 350 degree oven for 3 to 5 minutes or until top is crispy.

Serve with side of salsa and sour cream.
