Salmon Burgers with Dill Sauce

Ingredients:

2 pouches or cans (approx 3 ounces each) salmon with no bones
3 tablespoons olive oil, divided
1/4 cup finely diced onion
1/4 cup finely diced celery
1/4 cup finely diced red pepper
Salt and pepper
1/4 cup of Italian seasoned bread crumbs
1 clove garlic, minced
1 egg
3 to 4 split toasted buns
Lettuce leaves

Dill Sauce:

1/2 cup mayonnaise
Juice from half a lemon
1 tablespoon fresh chopped dill or 1 teaspoon dried dill

Mix together and refrigerate until ready to use.
 

Directions:

Heat 1 tablespoon oil in a small skillet.  Cook onion, celery, and red pepper in oil until tender.  Season with a little salt and pepper.

In a bowl add salmon, cooled cooked veggies, egg, garlic and bread crumbs and mix well. Heat remaining oil in a large skillet.  Form salmon mixture into 3 to 4 patties and cook for about 3 to 5 minutes each side. Serve on buns with lettuce and dill sauce.
