Skate Cookies

Recipe from The Happy Cookie Lady.

Ingredients:

1/2 of 18-oz pkg refrigerated sugar cookie roll
1/4 cup flour
1 can vanilla frosting, or your favorite vanilla frosting recipe
food coloring, whatever color you prefer
30 small candy canes

Break up cookie dough into a large bowl. Add flour; mix with hands until well blended. Shape dough into a 10 inch log; wrap in plastic wrap and freeze about 30 minutes.

Heat oven to 350. Remove dough from freezer. Flatten dough down center with handle of wooden spoon. To form boot shape with fingers, flatten one side of log until about 3/4 inch thick. Cut log into 3/8 inch thick slices; place on ungreased cookie sheets. Flatten slightly with fingers.

Bake for 8-11 minutes or until edges are lightly browned. Immediately remove cookies from cookie sheets. Cool completely.

Reserve 1/3 of frosting in another bowl and color with desired color. Put into resealable bag or decorator gun with small hole tip.
Frost cookies with white frosting. Unwrap candy cane and place one at base of cookie to make the blade, curve in front  Press slightly into frosting.
Decorate with colored frosting to make laces on skate.

Makes about 30.
