Recipe from The Green Gecko.
2 lbs red potatoes, cubed and cooked
1 cup bleu cheese, crumbled
1 cup mayonnaise
2 tbl brown mustard
2 tbl red wine vinegar
1/4 tsp each ground rosemary, sage & thyme
1/4 cup fresh parsley, chopped
1/8 cup chives
1/2 cup red onion, diced
1/2 cup celery, diced
1/2 cup roasted red pepper, diced
salt and pepper taste
Combine ingredients together in a bowl and serve chilled.
