Smothered and Covered French Toast

with cream cheese frosting

Recipe from Cheesecake Heaven.

Ingredients:

Custard:

3 eggs

¼ cup milk

¼ cup heavy cream

2 tsp vanilla extract

4 thick slices oval bread

Directions:

Whisk ingredients together. Dip bread in mixture and freeze on a buttered baking sheet.  Can be done ahead and just take out and make as needed. Butter the bottom of 12 or 14” skillet.  Cook each piece until golden brown and flip.

Cream Cheese Frosting:

2 ounces unsalted butter, softened

6 ounces cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

Beat cream cheese and butter until smooth then add in powdered sugar with vanilla.

*excess frosting can be used to frost cookies.

Strawberry Topping:

3 cups frozen strawberries

2 cups sugar

1.75oz package of pectin

Place the fruit in a large mixing bowl, and crush with a potato masher. Combine the sugar and pectin in another bowl, and stir until well blended. Add the sugar-pectin mixture to the fruit, and stir for three minutes. Portion and freeze.
