Ingredients:
1 1/2 cups flour
1 cup whole wheat flour
1 teaspoon baking soda
1/4 cup currants
1 1/4 cup buttermilk
1 tablespoon melted butter
1/2 teaspoon salt
Directions:
Combine flours, soda and salt in a large mixing bowl. Stir in currants. Add buttermilk and stir just until the dry ingredients are moistened. Add more buttermilk if needed. Turn dough onto a lightly floured surface and knead gently for 1 minute. Shape into a ball, place on a greased baking sheet. Pat down into a 8" circle and with a sharp knife, cut a 1/2" V in top of dough. Bake at 375 for 30 to 35 minutes or until golden brown, remove to a rack and brush with melted butter. Serve warm or room temperature.
