12 oz boneless skinless chicken breast, cubed
1/4 cup olive oil
1/4 tsp chipotle powder
Combine all ingredients. Allow to marinate for one hour. In a large skillet, saute chicken with marinate on medium to high heat. Cook until chicken is fully cooked. Remove from heat and insert a skewer into each piece. Serve while warm.
Blue Cheese Chive Dip:
1/2 cup sour cream
2 tbsp buttermilk
2 tbsp chopped chives
1/4 cup crumbled blue cheese
Combine all ingredients. Serve with Spicy Chicken.
