Spinach Artichoke Pasta Salad

Recipe from Zuppas in Neenah.

Ingredients:

1 package of cheese tortellini, cooked and cooled

2 cups fresh spinach, chopped

1 can of artichoke hearts, chopped

1 can of roasted red peppers, chopped

½ of a small red onion, finely diced

1 clove garlic, minced

1 lemon zested

Juice of one lemon

1/4 cup balsamic vinegar

1/2 cup extra virgin olive oil

1/4 cup Basil, chopped

Salt and pepper to taste

1 cup grape tomatoes cut in half

Directions:

In a large bowl add pasta and coarsely chopped baby spinach. Combine with artichoke pieces, roasted red pepper, garlic and red onion. In a separate bowl whisk lemon zest, juice, balsamic vinegar and olive oil.

Add the basil, tomatoes and season with salt and pepper to taste.
