Recipe from Chef Sebastien Amoruso.
Ingredients:
Crepe batter:
2 eggs
2 cups flour
2 cups milk
1/2 tsp sugar
a pinch of salt
Mix all ingredients in a blender and let it rest for a couple hours.
Whipped cream:
1 cup of heavy cream
1/3 cup powdered sugar (more if prefer sweeter)
Mix both ingredients in a bowl and whisk the mixture very vigorously until it thickens.
Chocolate Ganache:
4 oz of melting Dark chocolate
1/2 cup heavy cream
Bring the cream to a simmer and pour it on the chocolate, slowly stir it until the cream and chocolate make a smooth paste.
