Tomato Flatbread Pizza

Recipe from Chef Leo Dominguez.

Ingredients:

1 Frozen pizza dough

3 oz. Olive oil

2 cups Shredded mozzarella cheese

6 leaves Fresh basil, chopped

2 Roma tomatoes, sliced

salt & pepper to taste

Directions:

Roll pizza dough out until it is very thin and cut in to a rectangle. Dock or poke holes in the dough using a fork. Pace on a oven safe sheet pan, brush with olive oil and bake in a 425 degree oven for about 10 minutes or until the crust is crisp and golden brown. Remove from oven and cover with cheese and then the sliced roma tomatoes, place back in the oven until cheese is melted. Remove from oven place on cutting board and cut. Just before serving top with remaining olive oil, salt and pepper and fresh basil.
