1/4 cup sugar
1/4 cup water
1-inch piece ginger, peeled and thinly sliced
1 vanilla bean, split lengthwise and seeds scraped out
3 inch piece orange zest
2 blood oranges, peeled skinned, diced
1 mango, peeled and diced
1 small papaya, peeled and diced
8 kumquats, halved
1/4 cup pomegranate seeds
Combine the sugar, water, the ginger, orange zest and vanilla seeds/pod in a saucepan. Bring to a boil and remove from heat and cool. Meanwhile, combined all the fruit. Pour syrup over fruit. Toss and allow to marinated for 1 hour.
