15 ounce can great northern beans, drained and rinsed well
¼ cup sun dried tomatoes
¼ cup fresh basil, chopped
½ tsp capers, rinsed and chopped
½ tsp fresh garlic, chopped
pinch crushed red pepper flakes
pesto mayo (recipe below)
Combine all ingredients in a bowl and mix together with hands, smashing beans and blending together. Form into patties – approximately 4 ounces each.
Heat small amount of oil or butter on a griddle or skillet. Place patty in skillet. Cook approximately 3 minutes over medium heat. Carefully flip and cook additional 2 minutes.
Place on mutligrain roll and serve with pesto mayonnaise and greens (tomatoes are also great when in season)
1 cup mayonnaise
1 tsp basil
½ tsp lemon juice
½ tsp fresh garlic, finely chopped
salt and pepper to taste
Place all ingredients in a bowl or food processor. Use an immersion blender or food processor to mix well until smooth. Can be stored under refrigeration for 5 days.
