ASHWAUBENON - This week's Cooking With You guest is Nichole Garcia who lives in the Green Bay area.
Garcia was born and raised in Texas. She is married, has three boys and owns a photography business called, Squid Photography. Garcia grew up in the kitchen learning from the "Masters" her mom and granny.
She joined the Good Day Wisconsin crew to share some great recipes just in time for Cinco de Mayo.
Crockpot Chicken Tacos
4 whole Boneless, Skinless Chicken Breasts
2-4 cups Water or chicken stock to cover chicken in crock pot
1 "Pinch" Salt (optional)
1 tsp Cumin
1 tsp Chili Powder
1 tsp Garlic Powder
1 tsp Onion Powder
1 Bay Leaf (optional)
2 cans (4 Ounce) Diced Green Chilies (optional)
Toppings for tacos
1 Package finely Grated Mexican Blend Cheese
Hot Sauce (Tapatio)
2 cups Thinly Sliced Romaine Lettuce (or Any Lettuce)
4 whole Roma Tomatoes, Diced
1 whole onion , Diced
Taco Shells (Secret Step)
Oil, For making shells (canola, vegetable, olive)
1 Package corn tortillas
Place chicken breasts in a Crockpot pour in all dry ingredients (salt, cumin, chili powder and bay leaf, etc.) and diced green chilies. Fill Crockpot with water or chicken stock until all chicken is submerged. Stir so all dry ingredients dissolve. Cook on high for 2-3 hours or on low for 4-6. When chicken is fully cooked use two forks to shred chicken.
Get all other ingredients: grated cheese, sliced lettuce, diced tomato & onion, sour cream, guacamole and hot sauce ready.
HOMEMADE TACO SHELLS
*Be careful frying with hot oil!*
To fry the taco shells, heat a couple of inches of oil in a heavy skillet over medium-high. Use large set of heat proof metal tongs and carefully lay the tortilla in the oil heat tortilla on one side, flip over to heat other side. This prevents tortilla from cracking and breaking. Then, using the tongs, fold tortilla in half, frying for about 30 seconds, then flip it over and fry other side for 30 more seconds. Until they turn dark yellow to light brown. This is just a preference, frying longer will make them harder & crunchy.
Remove taco shells from the pan with tongs, holding sideways as you remove them to allow oil to drip out of the sides. Place the taco shell on a large plate lined with paper towel.
Stuff tacos with chicken and ALL the "fixins" and ENJOY!
2 oz Reposado or Any Silver Tequila
1 oz Fresh Apple Juice
.5 oz Fresh Lemon Juice
.25 oz Agave Nectar
1 Jalapeno Slice
1 Cucumber (1/2 diced into small cubes and 1/2 sliced in quarter inch pieces for garnish)
Cucumber Soda (homemade or store bought)
Fresh Thyme to garnish
In a large shaker pour all ingredients over ice, a handful of diced cucumbers. Shake hard 3-5 times. Serve over ice in chilled glass lined with salt add cucumber and thyme to garnish. Top off with a splash of Cucumber soda.
Homemade Cucumber Soda
1 cucumber thinly sliced
1 liter bottle Club Soda
Pour out a little bit of club soda and put in cucumber slices, reseal cap as tightly as possible , let it sit in fridge at least over night.
