4 boneless chicken breasts, pounded slightly
1/2 cup zesty italian dressing
Salt and pepper
4 thin slices ham
4 to 8 slices Swiss cheese
4 split and toasted buns or rolls
3/4 cup mayonnaise
2 tablespoons dijon mustard
2 tablespoons honey
2 cups arugula or spring mix lettuce
Pour Italian dressing over the chicken and let marinate in the fridge for at least 30 minutes or up to 8 hours. Remove chicken from marinade. Season with a little salt and pepper and grill chicken or fry in a skillet until cooked through, flipping once. Mix together mayo, mustard, and honey. Spread generously on toasted buns. Place chicken, a piece of ham, and 1 to 2 pieces of cheese on each roll. Toast sandwiches over low heat on the grill or on a foil lined baking sheet in a preheated 375 degree oven oven for a few minutes until cheese melts. Top with arugula or lettuce before serving.
