Recipe from Nicole Jennings.
1 box penne noodles
1 jar pasta sauce (size depends on how much sauce you like)
1 lb ground turkey
4 oz Turkey Pepperoni
1 pkg fresh basil
2-3 Tbsp Italian Seasoning Blend
8 oz Ricotta
1 pkg Italian Shredded Cheese
1 pkg Mozzarella Shredded Cheese
salt and pepper to taste
Preheat oven to 375 degrees. Saute Turkey in a heated/oiled saute pan until done. Add pasta sauce and a little bit of water to thin slightly. Add 2 Tablespoons of Italian Seasoning and tear half of the basil and put in pan and simmer.
Meanwhile, mix ricotta with the eggs, salt and pepper and half of the italian cheese. Cook noodles to 2 minutes under suggested cook time. Set aside. In a 9x13" pan, coat bottom with pasta sauce.
Then, add layer of noodles. Next, spread ricotta over the noodles. Layer turkey pepperoni. Next, layer mozzarella over pepperoni. Repeat the steps (sauce, noodles, pepperoni, cheese) until pan is full.
On the top, put mozzarella and the rest of the basil shreds.
Bake 45 minutes.
