2 cup all purpose flour
¼ cup granulated sugar
2 ¼ tsp baking powder
½ tsp baking soda
½ tsp salt
2 cups buttermilk
2 cups fresh berries
1 Tbsp granulated sugar
Preheat oven to 425 degrees. Sift all the dry ingredients together in a large bowl. Mix together eggs and buttermilk, then whisk into the bowl with the dry ingredients. Cover and let pancake mixture sit at room temp for 20 minutes. Pour the pancake mixture into a lightly buttered non stick pan, then top with fresh berries and granulated sugar. Bake for 10 to 12 minutes or until golden brown. Dust with powdered sugar and serve with raspberry sauce and maple syrup.
