1 tablespoon butter
1 cup finely diced red pepper
Salt and pepper
3 cups corn
2 cups mayonnaise
1 can (4 ounces) diced green chiles
1 1/2 cups cup shredded cheddar cheese
1 1/2 cups shredded Monterey Jack or Pepper Jack Cheese
Preheat oven to 350 degrees. Heat butter in a skillet and saute red peppers for a couple minutes. Season them with a little salt and pepper. In a large bowl mix together remaining ingredients, leaving out 1/2 cup of each of these cheeses. Spoon mixture into a small casserole dish. Sprinkling remaining cheese on top. Bake for 20 to 30 minutes or until hot and bubbly.
Serve warm with tortilla chips.
