Recipe from Valerie Doll of The Amazing Cupcake.
Ingredients for banana cake:
1 box white cake mix
1/3 cup oil
1 cup bananas (smashed with the back of a fork)
1 tsp cinnamon
1 cup milk
Mix ingredients in bow until combined. Divide into 24 cupcakes liners and bake at 350 degrees about 15 minutes.
Banana Rum Sauce:
1/2 cup butter
1 cup dark brown sugar
1/2 tsp cinnamon
2 shots Banana Liquor
4 small bananas
2 shots Dark Rum
Melt butter in skillet, add dark brown sugar and cinnamon. Stir mixture until sugar is dissolved.
Add 2 shots of banana liquor. Slice bananas lengthwise and then in half. Place them in the pan when they soften and start to turn brown.
Add in the 2 shots of Dark Rum and light! Once the alcohol is burned off take is off the heat to cool down. Take out the bananas leaving the liquid in the pan and mash up the bananas.
Bananas Foster Buttercream Frosting:
1/2 cup butter
1/2 cup shortening
4 1/2 cups powder sugar
1 tsp vanilla
1/4 cup rum mixture left in pan
Cream butter and shortening together slowly add powder sugar once mixed add vanilla and rum mixture to taste.
Once cupcakes are cooled pipe frosting onto the cupcakes and drizzle leftover rum mixture over the top.
