4 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper
1/2 cup olive oil
2 cups quinoa
4 cups water
1 mango, diced
1 can black beans, rinsed and drained
1 red pepper, diced
1/2 cup finely diced red onion
1/2 cup finely chopped cilantro
Whisk together first 6 ingredients in a large bowl. Bring water to a boil. Add quinoa. Cover and simmer for 10 to 15 minutes or until all water has been absorbed. Fluff with a fork. Add quinoa and all other ingredients to a large bowl. Toss to combine. Refrigerate at least an hour before serving.
