1 dozen uncooked Jumbo/Tiger Shrimp
3 cups Captain Crunch
2 Green Onions
1/4 ea of a Yellow, Red, and Orange Pepper
1/3 cup crumbled bleu cheese
1/3 cup dried cranberries
1/3 cup bacon bits
1 cCup fiesta blend shredded cheese
1 Tbsp diced sun dried tomato
1 Tbsp minced garlic
Clean and peel the shrimp leaving just the tail. Place the shrimp in a bowl and drizzle olive oil and a few dashes of sea salt on the shrimp and mix so all of the shrimp are coated.
Put the green onions, peppers, cranberries, and tomatoes into the processor and mince everything together. Put in a heated pan with a little olive oil and sauté them until soft. Let sit for a few minutes.
Use a food processor or grinder to grind the Captain Crunch down to the consistency of bread crumbs and pour in to a mixing bowl. The Captain Crunch will grind down to approximately 1 cup.
Add bleu cheese, bacon bits, shredded cheese, garlic and sautéed vegetables to the Captain Crunch and mix well then add the egg and mix well.
Combine the sautéed to the Captain Crunch mixture to make the stuffing.
Take the shrimp and filet them open to allow for the stuffing. Fill each with a baby spoon full of the stuffing and place each shrimp on a plate.
Heat the grill to approximately 300 degrees and place the shrimp on the top rack for 5-10 minutes or until pink.
