1 lb English cucumber, thinly sliced
1/4 red onion, thinly sliced
1/2 cup grape tomatoes, cut in half
10 mint leaves, thinly sliced
splash rice wine vinegar
splash Olive oil
1/4 pound feta cheese, crumbled
salt and freshly ground pepper
Gently toss together the sliced cucumbers, red onion, tomatoes, mint leaves with a little bit of vinegar and olive oil, salt and pepper to taste. Right before serving, sprinkle on crumbled feta cheese.
