1 1/4 cups sugar
1 cup buttermilk
2/3 cup oil
1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 1/4 tsp baking soda
2 cups raspberry buttercream
Whisk first 5 ingredients in large bowl to blend. Add in flour, cocoa and baking soda. Stir to combine. Divide batter between 2 8 inch greased pans. Bake at 350 degrees for 25-30 minutes or until toothpick inserted comes out clean.
Place 1 cake layer on plate. Spread with 1/2 cup buttercream. Top with second cake layer. Spread top and sides of cake with remaining frosting.
8 oz unsalted butter, room temperature
6 cups powdered sugar
1/2 cup raspberry jam
Beat butter and jam with paddle until well incorporated. Add powdered sugar, and beat on high until light and fluffy for about 3 minutes.
