3 pounds Yukon Gold or yellow potatoes, sliced
1 pound bacon
1 large onion, chopped
3 tablespoons whole-grain mustard
1/4 cup apple cider vinegar
2 teaspoons sugar
1/2 cup canola oil
4 scallions chopped
Salt and pepper
1/4 cup chopped parsley
Boil potatoes in a large pot until tender, 15 to 20 minutes.
Meanwhile, cook bacon in a large skillet cook bacon until crisp. Remove and crumble. Drain off all but 1 tablespoon drippings from the skillet. Add onion to the bacon drippings and cook until soft. In a big bowl, whisk mustard, vinegar, sugar, oil and a little salt and pepper.
Add warm bacon, potatoes onion, and scallions to the bowl. Toss gently to coat. Garnish with parsley and serve warm or at room temperature.
