3 tablespoons olive oil, divided
1 pound cooked sweet Italian sausage cut into small pieces
1 large onion, chopped
2 carrots, peeled and chopped
1 parsnip, peeled and chopped
3 celery stalks, chopped
Salt and pepper
3 teaspoons dried Italian seasoning
3 cans cannellini beans, rinsed and drained
6 cups chicken stock quarts
4 cups fresh spinach leaves
Fresh grated Parmesan cheese
1/4 cup fresh chopped parsley
Heat 1 tablespoon oil in large soup pan over medium-high heat. Add sausage and cook a few minutes until browned. Transfer sausage to bowl. Add remaining oil, onion, carrots, parsnips, and celery to the pot. Cook until veggies start to get a little tender. Season with salt and pepper and Italian seasoning. Add bean and stock. Bring to a boil. Turn down heat and simmer about 5 minutes. Use a potato masher to mash up the beans a bit.
Add sausage back to the pot alog with the spinach. Cook until spinach is wilted. Serve soup with Parmesan cheese and fresh chopped Parsley on top.
