1 block (8 ounces) cream cheese, softened
1 clove garlic, minced
2 tsp soy sauce
1/2 tsp fresh grated ginger or 1/4 tsp ground ginger
1 cup cooked and shredded chicken breast
1/3 cup teriyaki basting sauce
1/2 cup shredded carrot
1/4 cup chopped cashews or peanuts
3 chopped scallions
1 Tbsp chopped cilantro or parsley
In a bowl use a mixer to beat together cream cheese, soy sauce, garlic, and ginger. Beat until smooth. Spread cream cheese mixture on a plate.
Mix together shredded chicken and teriyaki basting sauce. Spread chicken mixture evenly over the top of the cream cheese.
Sprinkle carrots, nuts, scallions, and cilantro or parsley on top in this order.
Cover loosely and chill until ready to serve. Great served with sesame crackers.
