5 pounds chocolate (higher temp., does not have to be tempered)
1 3/4 cups evaporated milk, scalded (heat in microwave for 2 minutes)
1/2 cup plus 1/8 cup vegetable oil
1/3 cup plus 1 1/2 Tbsp peppermint extract
3 cups white chocolate
Green food color
1/4 cup dark chocolate
Mix in the mixer till well blended, pour in 1/2 sheet pan (lined with paper), and refrigerate until firm. Use cutter and run both lengths of pan cutting into squares. Refrigerate squares until ready to dip. Dip into melted white chocolate tinted light green. Accent with dark chocolate stripes.
