2 lbs peaches, sliced
½ cup sugar
1 teaspoon almond extract
¼ cup flour
1 cup flour
¼ cup sugar
⅓ cup brown sugar
1 tsp salt
½ cup butter cubed & cold
½ cup quick cooking oats
½ cup sliced almonds
Toss fruit with sugar and almond extract. Let sit a few minutes. Then add flour and toss to coat peaches. Place peaches in a 9 x 13 dish that has been sprayed with cooking spray. In a separate bowl, mix flour, sugars and salt. Cut in butter with forks or a pastry cutter until the mixture looks like coarse cornmeal. Toss in almonds and oats. Sprinkle topping over peaches. Preheat oven to 350º. Bake for 55-60 minutes or until the top is golden and the filling is bubbling. Great served warm with vanilla ice cream on top.
