1 1/2 cups mayonnaise
1 to 2 chipotle peppers in adobo sauce (depends how spicy you like it)
1 tablespoon lime juice
Salt and pepper
8 slices cooked bacon
1 pound peeled, deveined, and tails removed
2 tablespoons olive oil
2 to 3 teaspoons Cajun seasoning
1 avocado, sliced (Optional)
4 leaves romaine lettuce
4 slices ripe red tomato
8 slices sourdough bread, toasted
Use a food processor combine mayonnaise, chipotle pepper, lime juice, and a pinch of salt and pepper. Puree until smooth. Cover and refrigerate until ready to assemble sandwiches. Add oil to a large skillet. Add shrimp to the skillet. Season shrimp with Cajun seasoning. Cook for a minute or two on one side. Flip over and cook until shrimp just turns pink. one side.
To assemble sandwiches spread prepared mayonnaise mixture on bread. Top one slice of bread with lettuce, tomato, avocado, and some shrimp. Place over piece of shrimp on top. Slice sandwich and serve with lots of napkins.
