1/2 cup chopped walnuts
3 Tbsp dark brown sugar
1/4 cup raisins
1/2 tsp ground cinnamon
1/4 cup fresh orange juice
1/2 tsp pure vanilla extract
4 ripe bananas or plantains
2 Tbsp unsalted butter, melted
1 pint vanilla ice cream
Preheat oven to 350 degrees. Mix the walnuts, brown sugar, raisins, cinnamon, orange juice, and vanilla in a medium bowl.
Peel the bananas. Cut lengthwise in half, and place them close together, cut side up, on a foil lined jelly roll pan.
Top the bananas evenly with the nut raisin mixture. Drizzle butter over all.
Cover with another sheet of aluminum foil. Seal tightly.
Bake 25 minutes or until the bananas are soft and the sauce bubbles.
Serve warm on dessert plates with ice cream.
