Tuna Salad Ingredients:
2 5 oz pouches light tuna in water, refrigerated
2 ribs celery, finely diced
1/4 cup green onions, thinly sliced
1/3 cup mayonnaise
1/2 tsp white pepper
1 lemon, freshly squeezed
Add all ingredients to bowl and mix until well blended. Refrigerate or serve immediately.
Ingredients to make Tuna Melt:
8 Slices of bread or 4 rolls of choice
4 slices of cheddar cheese
4 slices of Monterey Jack
Place a slice of cheddar on 4 pieces of bread. Top with 1/2 cup tuna salad. Place a slice of Monterey Jack on top of tuna. Top with bread. Place in Panini grill until cheese melts. Serves 4 people.
